Step 1
Heat your oven to 400ยฐF and lining a baking sheet with parchment paper. Take half of the broccoli florets and pulse them in a food processor about 20 times until theyโre broken down into rice-sized pieces. Do the same with the rest of the broccoli.

Pour about half an inch of water into a large, shallow pan, add a teaspoon of salt, and bring it to a boil. Turn the heat down to low, add the broccoli rice, cover, and let it simmer for around 5 minutes until itโs tender. Drain the broccoli and let it cool for about 10 minutes.

Once cooled, transfer the broccoli to a clean kitchen towel, gather the edges, and squeeze out as much moisture as you can.

In a big bowl, combine the shredded cheddar, breadcrumbs, chopped onion, egg, bacon, ranch seasoning, and parsley. Add the broccoli rice to the mix and stir until everything sticks together well when you press it.

Using a small scoop or spoon, portion out about a tablespoon and a half of the mixture, shape it into a ball, then gently press it into a tot shape with lightly oiled hands. Arrange the tots on your baking sheet and drizzle them with a bit of olive oil. Sprinkle the remaining teaspoon of salt evenly over the top.

Pop the tots in the oven and bake for about 24 minutes, turning them over halfway through so they get golden and crispy all around. Enjoy!
