Directions
Lightly heat your oven to 425 degrees F. In a big bowl, mix together the lemon juice, olive oil, and garlic. Toss the asparagus in this mixture until each spear is nicely coated. Spread the asparagus out on a baking pan and roast for about 8 minutes, just until they’re tender but still have a bit of crunch. Let them cool for around 15 minutes to bring them to room temperature. While you wait, cut each slice of prosciutto in half lengthwise. Spread a teaspoon of goat cheese on each piece, then wrap them around the asparagus spears in a spiral. You can serve these right away or cover and pop them in the fridge until you’re ready to enjoy.
