Stir the soy sauce and sugar in a microwave-safe bowl, then heat it on high for about 2 minutes. Once itโs warm, stir in the onion, sesame seeds, sesame oil, garlic, and ginger to make your marinade. Slice the pork into thin, 1/4-inch cutlets and lay them out in a dish or pan. Pour the marinade over the pork, making sure each piece gets coated, then pop it in the fridge for at least 4 to 5 hoursโovernight if you have the time, especially if your slices are a bit thicker. When youโre ready to cook, preheat your oven to 350ยฐF (175ยฐC). Arrange the pork cutlets on a nonstick, oven-safe pan, spreading them out evenly, and save the leftover marinade. Bake the pork until itโs cooked through and an instant-read thermometer hits 160ยฐF (71ยฐC), which should take around 15 to 20 minutes. While the pork is baking, heat the reserved marinade in the microwave for about 2 minutes until it starts to boil. Once the pork is done, drizzle the hot marinade over the top and serve.
