Step 1
Lightly heat some olive oil in a large skillet over medium heat. Add the onions and chipotle peppers, cooking them until the onions turn soft and translucent, which should take about 10 minutes. Next, add the sausage and turkey to the skillet. Cook the meat, breaking it up with a spoon as it browns, for another 10 to 15 minutes. Once the meat is cooked through, transfer it to a slow cooker, leaving most of the grease behind in the pan.

To the slow cooker, add the crushed tomatoes, Italian-style diced tomatoes, beer, garlic powder, kosher salt, black pepper, cumin, chili powder, paprika, and brown sugar. Give everything a good stir so the flavors blend well.
