Why This Meal Is A Winner

Bursting with bold flavors and a perfect balance of spicy, savory, and slightly sweet notes. It’s quick to make and uses simple ingredients, making it a satisfying meal any day of the week. The chewy noodles combined with fresh vegetables and fragrant herbs create a truly comforting experience.

Cooking Secrets

- Use fresh wide rice noodles for the best texture and flavor.
- Stir-fry on high heat to keep the noodles from sticking and to develop a slight char.
- Adjust the level of chili to suit your spice preference, adding more or less as needed.

Step 1

Place the noodles in a pot and covering them with hot water. Add a tablespoon of oil to keep them from sticking, then let them soak for about 5 to 10 minutes until they’re soft. Once they’re ready, drain the noodles and rinse them with cold water to stop the cooking, then set them aside.

Step 2

Heat the remaining oil in a wok or large pan over medium-high heat. Toss in the chiles, onion, and garlic, and cook everything until it turns golden and fragrant—this should take around 5 minutes. Pour in the soy sauce, fish sauce, soy-based seasoning sauce, and brown sugar, and give it a good stir to blend all those flavors.

Step 3

Add the drained noodles along with the bell pepper, broccoli, pea pods, and carrots. Stir-fry everything together until the veggies are crisp-tender, which usually takes about 3 to 5 minutes. Finally, throw in the basil, take the pan off the heat, and let the dish sit for a minute so the basil can wilt nicely before serving.

Serving Inspiration

Serve this dish hot, garnished with fresh basil leaves and a wedge of lime on the side. It pairs well with a simple cucumber salad or a light soup to balance the rich flavors. A cold beer or iced tea also complements the spicy notes perfectly.

Leftover Storage Guide

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan or microwave, adding a splash of water to loosen the noodles if they have dried out. Avoid freezing, as it can change the texture of the noodles.
