Step 1
Place the noodles in a pot and covering them with hot water. Add a tablespoon of oil to keep them from sticking, then let them soak for about 5 to 10 minutes until they’re soft. Once they’re ready, drain the noodles and rinse them with cold water to stop the cooking, then set them aside.
Step 2
Heat the remaining oil in a wok or large pan over medium-high heat. Toss in the chiles, onion, and garlic, and cook everything until it turns golden and fragrant—this should take around 5 minutes. Pour in the soy sauce, fish sauce, soy-based seasoning sauce, and brown sugar, and give it a good stir to blend all those flavors.
Step 3
Add the drained noodles along with the bell pepper, broccoli, pea pods, and carrots. Stir-fry everything together until the veggies are crisp-tender, which usually takes about 3 to 5 minutes. Finally, throw in the basil, take the pan off the heat, and let the dish sit for a minute so the basil can wilt nicely before serving.
