Directions
Warm some olive oil in a saucepan over medium heat. Add the chopped poblano pepper and onion, and cook them together for about 6 to 8 minutes, stirring now and then, until the onion becomes soft and translucent. Next, stir in the honey, molasses, brown sugar, tomato paste, vinegar, Marsala wine, red pepper flakes, garlic powder, cumin, oregano, smoke flavoring, salt, and pepper. Whisk everything well until the sauce is smooth and combined. Turn the heat up just enough to bring the sauce to a gentle boil, then lower it to a simmer. Let it cook uncovered for about 35 minutes, stirring occasionally so it doesn’t stick, until the sauce thickens nicely. Once done, let it cool a bit before storing it in the fridge. It’ll keep well and taste even better the next day!
