Step 1
Warm your oven to 350°F (175°C) and grease a 2-quart casserole dish so nothing sticks. In a skillet over medium heat, cook the Italian sausage, breaking it up as it browns and gets crumbly—this should take about 10 minutes. Scoop the sausage out with a slotted spoon and set it aside in the casserole dish. Drain most of the fat from the skillet but keep about 2 tablespoons for the next step.

In another pan, melt 2 tablespoons of margarine over medium heat. Add the sliced apples and onions, cooking them gently until they’re soft and fragrant, which usually takes around 8 minutes. Toss these into the casserole dish with the sausage and give everything a light stir. Season the mixture with a pinch of salt, some black pepper, and a sprinkle of oregano.

Now, using the reserved drippings in the first skillet, whisk in the flour and cook it until it turns a nice golden brown. Gradually add water while stirring to create a thick, smooth gravy—it should take about 3 minutes. Pour this gravy over the sausage and apple mixture in your dish.

Spread mashed potatoes evenly on top, then use the back of a spoon to create little peaks for a nice texture. Brush the surface with a tablespoon of melted margarine to help it brown beautifully. Pop the whole thing in the oven and bake until the potatoes are golden and the filling is bubbling, about 30 minutes. Let it cool just a bit before serving and enjoy!
