Warm your grill to high and giving the grates a quick brush with some oil to keep things from sticking. In a food processor, pulse the sirloin and brisket together until they're nicely ground, then move the meat to a big bowl. Mix in the mayonnaise, chopped shallot, and wild game rub gently so everything combines without overworking the meat.

Divide the mixture into four equal parts and shape each one into a hot dog-like form. Place them on the hot grill and close the lid, cooking for about 4 minutes. Flip them over, close the lid again, and let them cook a bit more.

While the burger dogs are grilling, lightly toast your buns on the grill and set them aside. Next, sear each burger dog on all sides for that delicious char—about two and a half minutes per side should do it for medium doneness, or until they hit 140°F inside. In the last minute, pop a slice of cheese on each one so it melts nicely.
