What Makes This Recipe So Great
Cooking Tips
- Chill the balls well before serving to help them hold their shape.
- Roll the balls in cocoa powder or finely crushed cookies for extra texture.
Step 1
Preheat your oven to 350ยฐF (175ยฐC) and greasing a 9x5-inch loaf pan really well. In a large bowl, mix the cake mix, water, and eggs togetherโstart on low speed for about 30 seconds, then crank it up to medium and beat for another 3 minutes. Pour the batter into your prepared pan and bake for around 50 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 2
While the cake is cooling, combine the espresso, coffee liqueur, and brown sugar in a small bowl. In another bowl, mix the mascarpone, powdered sugar, and vanilla until smooth. Then stir in the espresso mixture until everythingโs well blended.
Step 3
Once the cake is fully cooled, crumble it into a large bowl. Pour the mascarpone mixture over the crumbs and mix it all togetherโusing your hands works best here to make sure everything is evenly combined without any dry bits.
Step 4
Finally, scoop out small portions with a melon baller or spoon, roll them into balls, and place them on a baking sheet. Pop them in the fridge for at least two hours to chill before serving. Enjoy!
