Step 1
Heat your oven to 375Β°F (190Β°C). Line a baking sheet with foil and get it ready. In a bowl, toss the grapes with a tablespoon of olive oil, thyme, oregano, and a pinch of salt and pepper. Spread them out on the baking sheet in a single layer and roast for about 12 to 15 minutes, until the grapes are soft and their skins begin to wrinkle.

While the grapes are roasting, brush the baguette slices lightly with the remaining olive oil and arrange them on another baking sheet. Pop these in the oven for 3 to 4 minutes until they turn a nice golden brown.
Step 3
Once everythingβs done, let the grapes and toasts cool just a bit. Mix the ricotta cheese with lemon zest in a small bowl, then spread this creamy mixture over each toasted baguette slice. Top with the roasted grapes, drizzle a little balsamic glaze over everything, and enjoy!
