Lightly heat your grill to medium-high and give the grates a quick brush with oil so nothing sticks. Pour a teaspoon of olive oil onto a small plate, then toss the nectarine wedges in it, making sure theyβre all nicely coated. Brush both sides of the bread slices with the remaining olive oil.

Pop the nectarines on the grill and cook them for about 1 to 2 minutes on each side until theyβre nicely charred. Once theyβve cooled just a bit, slice each wedge in half lengthwise so you end up with smaller pieces. Next, grill the bread for about a minute per side until you see those perfect grill marks and the bread is toasted.

Spread a generous layer of ricotta over each slice of grilled bread. Arrange the grilled nectarine pieces on top, sprinkle with almonds and fresh mint, then finish everything off with a drizzle of honey. Cut each toast in half and enjoy!
