Directions
Bring a big pot of salted water to a boil. Toss in the potatoes with their skins on, along with the garlic, and let them cook until the potatoes are tender, which usually takes about 15 minutes. While the potatoes are boiling, peel the papery husks off the tomatillos and give them a quick rinse. Add the tomatillos to the pot for the last 5 minutes of cooking. Once everything is done, drain the water and transfer the potatoes, garlic, and tomatillos to a large bowl. Add some butter and milk, then mash everything together until you reach the texture you like. Feel free to add more butter or milk if needed, and donβt forget to season with salt and pepper to taste.
