Mix the cottage cheese and 1 cup of butter in a bowl until well combined. Gradually add the flour, stirring as you go—it’s normal for the dough to be a bit sticky. Divide the dough into three equal parts, wrap each in waxed paper, and pop them in the fridge for at least two hours to chill.
