Tips For Perfect Results
- Use fresh toppings like diced onions, jalapeños, and avocado to add brightness.
- Warm the cheese sauce before drizzling to ensure it spreads smoothly over the tots.
Step 1
Gently heat your oven to 400°F (200°C). Spread the potato nuggets out on a baking sheet and pop them in the oven. Let them bake until they’re nice and crispy, about 22 to 24 minutes.
Step 2
While the nuggets are cooking, heat up a large skillet over medium-high heat. Toss in the ground beef and cook it, stirring often, until it’s browned and crumbly—this usually takes 5 to 7 minutes. Once the beef is cooked, add the water and taco seasoning. Bring it to a boil, then lower the heat and let it simmer until the sauce thickens a bit, around 5 minutes.
Step 3
When the nuggets are done, move your oven rack to about 6 inches from the broiler and preheat the broiler. Arrange the crispy nuggets on an oven-safe platter, then spread the seasoned beef evenly over the top. Sprinkle on a mix of Mexican cheese and pepper jack cheese.
Step 4
Pop the platter under the broiler just long enough for the cheese to melt and bubble—usually 1 to 3 minutes, so keep an eye on it! While that’s happening, whisk together the sour cream and lime juice in a small bowl.
Step 5
Once the cheese is perfectly melted, take the platter out and top everything with diced tomatoes, black olives, jalapeños, avocado, the sour cream mixture, sliced scallions, and a sprinkle of fresh cilantro. Serve right away and enjoy!
