Directions
Warm your oven to 375°F (190°C) and lining two baking sheets with parchment paper. In a bowl, combine the almonds, cranberries, peanuts, and candy pieces to make your trail mix. In a larger bowl, mix together the oats, flour, brown sugar, baking soda, and salt. Add the butter, honey, egg, and vanilla extract, then beat everything until the dough comes together nicely—using either an electric mixer or a sturdy wooden spoon. Gently fold in the trail mix so it’s evenly distributed throughout the dough. Scoop out tablespoon-sized portions of dough and drop them onto the prepared sheets, spacing them a little apart. Bake the cookies for about 8 minutes, or until the edges look set and the bottoms have turned a lovely golden brown. Let them cool on wire racks before digging in.
