Step 1
Pour the pineapple juice into your slow cooker, but keep the pineapple chunks aside for later. Add the beef, onions, beef broth, 3 tablespoons of red wine vinegar, garlic, seasoned salt, paprika, and black pepper to the slow cooker with the juice. Give everything a good stir, cover it up, and let it cook on Low for about 6 to 6 and a half hours, until the beef is nice and tender.
Step 2
Once the beef is cooked, turn the slow cooker up to High. Toss in the green and red bell peppers along with the brown sugar. In a small bowl, whisk together the cornstarch, soy sauce, and the remaining 2 tablespoons of red wine vinegar until smooth. Stir this mixture into the slow cooker to thicken things up. Cover it again and cook for another hour.
Step 3
Right before youβre ready to serve, gently fold in the tomatoes and the pineapple chunks you set aside earlier. Give it one last stir, and itβs ready to enjoy!
