Step 1
Bring a pot of lightly salted water to a boil. Once it’s boiling, stir in the oats, then turn the heat down to medium-low. Let the oats cook gently, stirring now and then, until they’re soft and most of the water is gone—this should take about 15 minutes. Take the pot off the heat and let it sit for another 15 minutes to cool down a bit.
Step 2
Transfer the oats to a blender and add the cashew milk and banana. Blend everything until you get a smooth, creamy mixture. Divide the oat pudding into two bowls, then top each one with some diced mango, a sprinkle of coconut flakes, and a drizzle of honey. Enjoy!
