Step 1
In a big bowl, mix together the flour, lemon pepper, salt, thyme, cayenne, and half of the lemon zest. Pour the lemon juice and the rest of the zest into a shallow dish, then soak the trout fillets in it for about a minute.

Heat some oil in a large skillet over medium heat. Take each fillet and coat it well on both sides with the flour mixture, shaking off any extra. Place the fillets carefully in the hot oil and cook for about 3 to 4 minutes on each side, until they turn golden and flake easily with a fork.
Step 3
Once cooked, transfer the fish to some paper towels to drain briefly. Throw away the leftover lemon juice. Serve the fillets with a lemon wedge on the side for a fresh squeeze of flavor.
