Whisk the paprika, cumin, salt, and pepper together in a small bowl to create your spice blend. Spread half of the onion slices evenly across the bottom of a 10-inch skillet. Next, layer the potato slices over the onions in a single layer, overlapping them a bit if needed. Repeat this layering with the carrots, zucchini, bell pepper, and then the tomatoes. Sprinkle the garlic over the tomatoes before adding the turkey chunks on top, spacing them out evenly. Sprinkle the spice mix over the turkey, then top everything with the remaining onions and drizzle some vegetable oil over the whole dish. Cover the skillet and cook on medium-low heat for about 40 minutes, or until the turkey is cooked through and the onions on top are soft and translucent. Once done, take off the lid and let it sit for 10 minutes to settle. Just before serving, drizzle a little olive oil over everything for a nice finishing touch.
