Blend together the sour cream, pico de gallo, and taco seasoning in a bowl until well combined. Spread this flavorful mixture evenly over each flour tortilla. Next, sprinkle a good handful of the Mexican cheese blend on top, then add slices of turkey. Roll the tortillas up tightly around the filling. Wrap each one in aluminum foil and pop them in the fridge for at least 8 hours, or overnight if you have the time. When you’re ready to serve, unwrap the foil and slice each wrap into bite-sized pieces, about 3/8 of an inch thick. Arrange the slices on a plate, and you’re good to go!
