Step 1
Bring a large pot of salted water to a boil. Toss in the pasta shells and cook them until they’re tender but still have a bit of bite, about 12 minutes. Once done, drain and set aside.

While the pasta cooks, preheat your oven to 350°F. In a large saucepan, combine the ground turkey, chopped green chiles, water, and taco seasoning. Cook everything together, stirring occasionally, until the turkey is fully cooked and the liquid has mostly evaporated—this should take around 8 to 10 minutes. Then, take it off the heat.
Step 3
Spread the salsa evenly across the bottom of a 9x13-inch baking dish. Fill each pasta shell with some of the turkey mixture and place them snugly on top of the salsa. Sprinkle the shredded Cheddar cheese over the shells, then cover the dish with foil.

Pop it in the oven and bake for about 30 minutes, until the cheese is melted and bubbly. Let it cool a bit before serving, and enjoy!
