Step 1
Preheat your air fryer to 355°F (180°C). In a mixing bowl, combine the ground sirloin with 2 tablespoons of tomato sauce, chopped onion, oats, Italian seasoning, parsley, salt, and pepper. Mix everything gently until just combined — you don’t want to overwork the meat. Shape the mixture into two small loaves, about 4 1/2 inches long and 2 inches wide.
Step 2
Give the air fryer basket a light spray of cooking spray to keep things from sticking. Place the two meatloaves inside, making sure they aren’t touching. Brush the tops with the remaining tablespoon of tomato sauce for a little extra flavor.
Step 3
Cook the loaves in the air fryer for about 17 to 20 minutes. They’re done when a meat thermometer reads 165°F (73°C) in the center. Once cooked through, let them rest a few minutes before serving.
