Step 1
Gently heat some oil in a saucepan over medium-high heat until it’s shimmering. Toss in the chopped onion along with about 1 1/2 tablespoons of taco seasoning. Cook everything together, stirring occasionally, until the onions are soft and translucent—this should take around 3 to 4 minutes. Next, add the canned tomatoes with their juice, the chicken broth, and the corn to the pot.
Step 2
While the soup is warming up, sprinkle the rest of the taco seasoning over the chicken pieces and then add them into the soup. Give it a good stir to mix everything well. Cover the pot and let it simmer until the chicken is cooked through, which usually takes about 5 minutes.
Step 3
Once it’s ready, ladle the soup into bowls and top with some crunchy tortilla chips, creamy avocado slices, a sprinkle of Oaxaca cheese, and a dollop of sour cream. Enjoy!
