Directions
Lightly heat your oven to 400ยฐF (200ยฐC) and line a 12-cup muffin tin with paper liners. Give the liners a light spray of cooking oil to keep the muffins from sticking. In a small bowl, whisk the chocolate drink powder into the milk until itโs completely smooth. In a larger bowl, beat together the brown sugar, egg, oil, and vanilla until everything is well combined. Pour the chocolate milk mixture into the egg mixture and stir it all together. Then, add the baking mix and stir until you have a smooth batter. Gently fold in the chocolate chips. Divide the batter evenly among the muffin cups, filling them almost to the top. Pop the tin in the oven and bake for about 15 to 18 minutes, or until a toothpick stuck in the center comes out with just a few moist crumbs. Let them cool a bit before digging in!
