Why This Recipe Stands Out
Kitchen Tricks
- Use high heat when stir-frying prawns to keep them juicy and prevent them from becoming rubbery.
- Add vegetables last to keep them crisp and vibrant in color.
Step 1
Blend the soy sauce, water, brown sugar, and ginger in a small saucepan. Put it on low heat and let it simmer gently, giving it a stir now and then until it’s ready.
Step 2
While the sauce is cooking, grab another small saucepan and add half a cup of water along with the celery and bell peppers. Cover it up and let everything steam over medium heat for about 10 minutes. Once the veggies are tender, drain them and keep them covered.
Step 3
Bring a large saucepan of water to a boil and add the udon noodles along with a cup of water. Let them cook for 4 to 5 minutes until heated through. Drain the noodles, then put them back in the pan over medium heat. Stir in about a third of the sauce and cook for another 3 to 4 minutes so the noodles soak up the flavor.
Step 4
Push the noodles to one side of the pan and add the prawns. Cook them until they turn opaque and are cooked through, which should take around 3 to 5 minutes.
Step 5
Divide the noodles between two bowls. While the prawns are still in the pan, squeeze some lemon juice over them and give them a quick stir to coat. Then, pile the veggies on top of the noodles, followed by the prawns. Finish by drizzling the remaining sauce over everything to your taste. Enjoy!
