Step 1
Put the pumpkin seeds in a container with a lid. Add the Worcestershire sauce, hot pepper sauce, bacon grease, and a bit of liquid smoke. Give everything a good stir, cover it up, and let it sit in the fridge overnight so the flavors really soak in.

When you’re ready to cook, preheat your oven’s broiler and move the rack to about 6 inches from the heat. Use a slotted spoon to scoop the seeds out of the marinade and into a bowl. Toss them with cayenne pepper and garlic salt until they’re evenly coated.
Step 3
Spread the seeds out in a single layer on a baking sheet and sprinkle a little extra salt on top. Pop them under the broiler and roast until they’re golden and toasted, which should take around 8 minutes. Make sure to stir or flip the seeds a couple of times while they’re cooking so they brown evenly.
