Preheat your oven to 375Β°F (190Β°C). Cook the bacon in a skillet over medium heat until itβs nice and crispy, then transfer it to some paper towels to drain. Keep four slices whole for later and chop up the other four finely.

Turn the heat up to medium-high and toss in the chopped onion and garlic. Stir them around until the onion softens and the garlic starts to brown a bit. Pour in the balsamic vinegar and cook everything together for about a minute. Then add the chopped mushrooms and let them cook for another three minutes before taking the pan off the heat.

In a bowl, mix the ground beef with the chopped bacon, breadcrumbs, Italian seasoning, Parmesan, the mushroom mixture, and the egg. Use your hands to combine everything well, then season with salt and pepper. Shape the mixture into two patties.

Split the hamburger buns and lay them cut side up on a baking sheetβno need to grease it. Place a beef patty on each bun half, then top with a tomato slice, two slices of the reserved bacon, and a slice of Swiss cheese.
