Simple Cooking Tips

Step 1
Gently heat some oil in a large pot over medium-high heat. Toss in the onions and cook them until theyโre soft and translucent, about 5 minutes. Next, add the beans along with enough water to cover them by 3 to 4 inches. Stir in the tomato paste, garlic, dried onion, mustard seeds, chile pods, cinnamon sticks, cardamom, cumin seeds, oregano, brown sugar, and epazote. Bring everything up to a boil.
Step 2
Once boiling, lower the heat, cover the pot, and let it simmer gently. Give it a stir every now and then, and cook until the beans are tenderโthis usually takes around 3 1/2 to 4 hours.
Step 3
When the beans are nice and soft, take the lid off and turn the heat up to high. Let it boil, stirring frequently and mashing some of the beans against the bottom to thicken the sauce. This should take about 30 minutes. Finally, taste and season with salt to your liking.
