Step 1
Heat a little oil in a skillet over medium heat until itโs nice and hot. Toss in the mushrooms and onions, and cook them until the mushrooms start to soften, which usually takes about 5 minutes. Then add the beans, diced tomatoes, and a couple of tablespoons of the tomato juice you saved. Sprinkle in the chorizo seasoning and stir everything together, letting it cook for another 4 minutes or so. Next, throw in the spinach and cook until itโs wilted, about 5 minutes.
Step 2
Once your veggie mixture is ready, warm up your tortillas. Spoon a few tablespoons of the filling onto the center of each one. Fold in the edges starting from the middle of the tortilla, gently tucking the filling inside, and then roll it up all the way. Keep going until youโve wrapped up all the burritos.
