Step 1
Bring some water to a boil in a saucepan, then add the rice. Turn the heat down to low, cover it, and let it simmer gently for about 20 minutes until the rice is tender. Meanwhile, heat your oven to 375ยฐF (190ยฐC).

In a medium skillet over medium-high heat, combine the soy crumbles, tomatoes with their juice, chili powder, cumin, and taco seasoning. Cook this mixture, stirring and breaking up the tomatoes, for around 10 minutes until everything is well combined and heated through.

Lightly grease an 8x8 inch baking dish and lay down a flour tortilla. Spread half of the beans over it, then add some jalapeno slices, rice, salsa, the soy mixture, and about a cup of shredded Cheddar cheese. Repeat these layers starting with another tortilla, and finish by sprinkling the remaining 1ยฝ cups of cheese on top.
Step 4
Pop the dish in the oven and bake for about 15 minutes, or until itโs hot all the way through and the cheese has melted nicely. Serve right away and enjoy!
