Preheat your oven to 350°F (175°C). In a large pot, melt the butter over medium-high heat, then add the celery, onion, and apple. Cook everything together until the veggies are nice and soft, about 5 to 7 minutes. Next, sprinkle in the sage, thyme, paprika, salt, and pepper, stirring to mix all those flavors. Pour in the chicken broth, brown sugar, and maple syrup, and let it simmer for a few minutes until it thickens up a bit. Tear up the waffles and add them to the pot, stirring gently until they soak up the liquid and soften, which should take around 3 to 4 minutes. Toss in the pecans and buttermilk, making sure everything is well coated, then stir in the eggs to help bind it all together. Transfer the mixture into a large casserole dish, spread it out evenly, and pop it in the oven. Bake until the top turns golden brown, about 45 minutes. Once it’s out of the oven, give it a few minutes to rest before serving.
