Blend the maple syrup with the ginger and nutmeg in a small pitcher or bowl, then set it aside to let the flavors meld. In a large bowl, whisk together the milk, pumpkin puree, egg yolks, and vanilla extract until smooth. In another bowl, combine the flour, flaxseed meal, baking soda, and salt. Pour the wet ingredients into the dry ones and stir just until everything is combined, then mix in the melted butter.

Take a clean bowl and beat the egg whites until they get really frothy. Gradually add the brown sugar a couple of tablespoons at a time, continuing to beat until you get soft peaks. Gently fold the egg whites into the batter in three batches, being careful not to deflate them.
