Step 1
Warm your oven to 350Β°F (175Β°C). In a large bowl, mix the ground beef, bread crumbs, chopped onion, milk, egg, and salt until everything is well combined. Shape the mixture into meatballs and place them on a baking sheet. Pop them in the oven and bake for about 25 minutes, or until the bottoms are nicely browned. Once done, transfer the meatballs to your slow cooker.

In a small saucepan over low heat, whisk together the cornstarch and brown sugar. Slowly add the reserved pineapple juice and vinegar, stirring until the sauce is smooth. Let it come to a boil for a full minute, then take it off the heat. Pour this sauce over the meatballs in the slow cooker.

Add the pineapple chunks and chopped green bell pepper to the slow cooker as well. Cover and let everything cook on low for 3 to 4 hours so the flavors can meld together beautifully. When itβs ready, give it a gentle stir and serve!
