Directions
Melt the butter in a large pot over medium heat. Toss in the onion, leeks, and garlic, and cook them gently until they soften and smell amazing. Next, add the celery and carrots, giving everything a good stir. Pour in the broth, tomato sauce, black beans, cabbage, and potatoes, then sprinkle in oregano, basil, black pepper, celery salt, cayenne pepper, and toss in the bay leaves. Bring everything up to a boil, then lower the heat, cover the pot, and let it simmer for about 25 minutes. Stir now and then, until all the veggies are tender and the flavors have melded together. When you're ready to serve, sprinkle some Parmesan on top for a nice finish.
