Melt the margarine in a large saucepan over medium heat. Toss in the apples and pears, cooking and stirring them for about 5 minutes until they start to soften. Pour in the vegetable broth and add the sage, pepper, and bay leaf. Bring everything to a boil, then lower the heat, cover the pan, and let it simmer gently for around 20 minutes until the fruit is tender and the flavors have melded together. Take the pan off the heat and let it sit for about 5 minutes to cool slightly.
Step 2
Ladle about a third of the soup into a blenderβjust fill it halfway to avoid any spills. Secure the lid with a towel, then pulse a few times to get things moving before blending until smooth. Repeat this in batches until all the soup is pureed. If you prefer, you can skip the blender and use a stick blender right in the pot to puree everything.
Step 3
Once smooth, return the soup to the saucepan and warm it over medium heat until itβs heated through. Finish by sprinkling some fresh parsley on top before serving.
