Warm some oil in a large pot over medium-high heat. Toss in the ground turkey and chorizo, breaking it up with a spoon, and cook until itβs starting to brown, about 5 minutes. Next, add the chopped onion, celery, and jalapeno, and keep cooking until the meat is fully browned and the onion has softened, which should take another 5 minutes or so.

Sprinkle in the cumin, coriander, oregano, thyme, and garlic, stirring everything together to wake up the flavors. Then, add the diced tomatoes, cannellini beans, tomatillos, and green chiles. Pour in the soy sauce, give it all a good stir, and turn the heat down to let it simmer gently. Let it bubble away for 20 to 30 minutes so all the flavors can meld.
