Step 1
Lightly heat your oven to 350Β°F (175Β°C). In a small saucepan or skillet, sprinkle the brown sugar and warm it over medium heat until it melts. Add a little water and stir until the sugar completely dissolves. Keep heating the syrup until it reaches about 234 to 240Β°F (112 to 116Β°C) β you can test this by dropping a bit into cold water; it should form a soft ball that flattens when you take it out. Pour this syrup into a round baking dish and tilt it around so the bottom is evenly coated.
Step 2
Arrange a layer of bananas over the syrup. In a bowl, mix together the whole wheat flour, wheat germ, oats, and brown sugar. Add the margarine and use your hands to pinch it into the dry ingredients until you get a crumbly dough. Sprinkle half of this crumb mixture over the bananas and gently press it down. Add another layer of bananas, then sprinkle about half of the cinnamon over the top.
Step 3
Now, spread the rest of the crumb mixture evenly over the bananas and press it down smoothly. Finish by sprinkling the remaining cinnamon on top. Pop the dish into the oven and bake for about 45 minutes, or until the topping is nicely toasted and a toothpick inserted in the center comes out clean. Let it cool a bit before digging in!
