Why This Recipe Is So Flavorful
Tips For Better Flavor
- Use a meat thermometer to avoid overcooking; pork is best at 145ยฐF (63ยฐC).
- Sear the chops on high heat first for a nice crust, then finish cooking on medium heat to keep them juicy.
Step 1
Sprinkl the pork chops evenly with the ranch dressing mix. In a skillet, heat the butter and olive oil over medium-high heat until hot. Add the pork chops and cook them until they develop a nice brown crust, about 3 to 5 minutes on each side. Then, lower the heat to medium and keep cooking, flipping every now and then, until the chops are just a little pink in the centerโthis should take around 8 to 10 minutes. To be sure, check with an instant-read thermometer; it should register 145ยฐF.
Step 2
Once the chops are done, transfer them to a warm plate and pour off all but about a tablespoon of the fat from the pan. Add the broth, wine, and lemon juice to the skillet. Bring it to a boil while scraping up the tasty browned bits stuck to the bottom with a wooden spoon. Let the sauce simmer until it thickens to your liking. Finally, spoon the sauce over the pork chops and serve.
