Warm your oven to 375°F (190°C). In a big bowl, toss together the sweet potatoes, white potatoes, sausage, carrots, parsnips, turnips, onion, and garlic. Sprinkle in the sage, parsley, rosemary, thyme, salt, and pepper, and mix everything really well so the flavors get evenly distributed. Spread the vegetable and sausage mixture out in a large roasting pan, then lay the bacon strips over the top. Pop the pan into the oven and roast for about an hour, or until the potatoes are tender when you poke them with a fork. Once it’s done, give everything a little stir before serving to mix in those delicious bacon flavors.
