Step 1
The night before you want to enjoy waffles, mix warm water, honey, and yeast in a small bowl. Give it a stir and let it sit for about 5 to 10 minutes until it gets bubbly. Next, in a large bowl, combine the milk and olive oil. Gradually add 1 1/2 cups of gluten-free flour, about a quarter cup at a time, stirring well after each addition. You want the batter to be thick but still pourable. If it feels too thin, sprinkle in a little more flour, a tablespoon or two at a time, until itβs just right.
Step 2
Once the yeast mixture is bubbly, stir it into the batter until everything is just combined. Cover the bowl with plastic wrap or a lid and leave it on your counter overnight. The batter will puff up quite a bit, so make sure your bowl is big enough.
Step 3
When youβre ready to make waffles, whisk an egg with a pinch of salt and fold it into the batter. Heat up your waffle iron according to the instructions, then pour about 1/4 cup of batter onto it. Cook until the waffle is golden brown and the steam stops, usually around 5 minutes. Keep going until youβve used all the batter, and enjoy!
