Step 1
Put the potatoes in a large pot and covering them with salted water. Bring it to a boil, then turn the heat down to medium-low and let them simmer until they’re soft, about 20 minutes. Drain the potatoes well.

Mash the potatoes in a big bowl using a fork or a masher. While they’re still warm, quickly mix in the egg yolks, 2 tablespoons of butter, a pinch of nutmeg, and some salt. Stir everything together until smooth, then set it aside to cool for about 10 minutes.

While the potato mixture cools, move your oven rack so it’s about 6 inches from the heat and preheat the broiler. Line a baking sheet with parchment paper to keep things tidy.

Fit a piping bag with a large star tip and fill it with the potato mix. Pipe out little rosettes, roughly the size of golf balls, onto the baking sheet. Brush each one gently with the remaining butter.

Pop the tray under the broiler and cook just until the potatoes are warmed through and lightly browned on top—this should take around 3 to 5 minutes. Keep them warm until you’re ready to serve.
