Step 1
In a large bowl, mix the flour and salt together. Slowly add about 1/4 cup of water, adding more little by little until you get a soft, slightly sticky dough. Stir in the oil and knead everything until smooth. Cover the dough with a cloth or plastic wrap and let it rest for about 30 minutes.

While the dough is resting, mash the boiled potatoes in a bowl. Add cumin powder, chili flakes, pepper, salt, crushed coriander seeds, dried fenugreek, chopped chilies, onion, and fresh coriander leaves. Mix it all well so the flavors come together.
