- Toss the spices in oil before coating the cauliflower to help them stick and release their aroma.
- Adjust the level of zest by adding more or less lemon juice or zest according to your taste.
Step 1
Gently heat some oil in a small pan over medium-high heat. Once itβs hot, add the mustard seeds and cover the pan. Let them pop for a couple of minutes until they quiet down. Then, toss in the chopped onion and lower the heat to medium-low. Cook the onion gently, stirring now and then, until it becomes soft and translucentβthis should take about 10 minutes.
Step 2
Stir in the garlic, ginger, turmeric, chili powder, and a pinch of salt. Cook everything together for about half a minute to bring out the flavors. Add the cauliflower pieces to the pan and give them a good stir, cooking for just a minute to coat them in the spices.
Step 3
Transfer the cauliflower to a microwave-safe bowl and cover it. Microwave for around 3 minutes, or until the cauliflower is tender when pierced with a fork. Finally, squeeze some fresh lemon juice over the top and give it a little mix before serving.
