Step 1
In a resealable bag, combine the lime juice, olive oil, chili powder, cumin, salt, and black pepper. Add the chicken breasts, seal the bag, and toss everything together to coat the chicken well. Let it marinate in the fridge for at least an hour, or up to overnight if you have the time.

When you're ready to cook, heat your grill to medium and brush the grates with a little oil to prevent sticking. Grill the chicken for about 5 minutes on each side, until it’s cooked through and the juices run clear. Once done, let it rest for a few minutes, then roughly chop and pop it in the fridge to cool.

In a big bowl, mix together the romaine, baby greens, corn, Cheddar, black beans, and cucumber. In a separate smaller bowl, stir the ranch dressing, salsa, and fresh cilantro until combined. Pour this over the salad and toss gently to coat everything.

To finish, sprinkle the salad with crushed taco chips and the chopped chicken. Serve right away and enjoy!
