Directions
Whisk 3 tablespoons of jerk seasoning with some oil, lemon juice, lime juice, and orange juice in a resealable plastic bag. Take your chicken breasts and carefully slice them horizontally through the middle, stopping before you cut all the way through. Open them up like a book. Sprinkle the inside of the chicken with the remaining tablespoon of jerk seasoning, then pop the chicken into the marinade bag. Seal it up and let it chill in the fridge for about an hour. When you’re ready to cook, take the chicken out and let it sit at room temperature for around 10 minutes. Heat your grill to about 500°F and give the grates a quick oiling to prevent sticking. Grill the chicken for 4 to 5 minutes on each side, until it’s cooked through and the juices run clear. Serve it up hot and enjoy!
