Step 1
Gently heat your oven to 350°F (175°C) and lining a 24-cup muffin tin with paper liners or giving it a good spray with cooking spray. In a large bowl, combine the cake mix, water, eggs, and vegetable oil. Beat everything together with an electric mixer until the batter is smooth, which should take about two minutes. Stir in 2 tablespoons of lime zest, the lime juice, and a few drops of green food coloring until everything is well mixed. Spoon the batter evenly into the prepared muffin cups.

Pop the tray into the oven and bake for about 18 minutes, or until the cupcakes turn golden and a toothpick inserted into the center comes out clean. Once out of the oven, let them cool completely on a wire rack.

While the cupcakes are cooling, make the frosting by beating together the butter and cream cheese until smooth and creamy.
