Directions
Tos the chicken with the lemon juice in a big bowl. In another bowl, mix together the rice, celery, olives, and 1/4 cup of the bacon. Add that to the chicken and give everything a good stir to combine. In a small bowl, whisk the mayonnaise, barbecue sauce, and liquid smoke until smooth. Pour this dressing over the chicken mixture and toss everything together so it’s well coated. Sprinkle the remaining 2 tablespoons of bacon on top. Cover the bowl with plastic wrap and pop it in the fridge for at least 2 hours, or even overnight, to let the flavors meld.
