Better Cooking Tips
- Use fresh lime juice at the end for a bright, zesty finish.
- Toast spices lightly in a dry pan before adding to deepen their flavor.
Step 1
Warm some olive oil in a skillet over medium heat. Toss in the onions and cook them, stirring occasionally, until they start to turn golden, which should take about 5 minutes. Turn the heat up to medium-high, then add the bell pepper, serrano pepper, garlic, cumin, turmeric, and a pinch of cayenne. Stir everything together and cook just until you can really smell those spices, about a minute.
Step 2
Pour in the diced tomatoes, black beans, tomato sauce, and green onions. Squeeze in the lime juice, then sprinkle in some salt and brown sugar. Give it all a good stir, bring the mixture to a gentle boil, then lower the heat and let it simmer slowly for about half an hour so all the flavors meld beautifully.
Step 3
Once itβs done, take it off the heat and sprinkle fresh cilantro on top before serving.
