In a bowl, combine the ground lamb, basmati rice, 2 tablespoons of tomato puree, mint, salt, and pepper. Give everything a good mix and set it aside for a bit.

Trim the ends off the zucchinis and scoop out the centers with an apple corer or a small spoon to create little tubes. Then stuff them with the lamb mixture, packing it in gently.

In a large skillet, mix the remaining tomato puree with half a teaspoon of salt. Nestle the stuffed zucchinis into the sauce and pour in enough water to just cover them. Bring it up to a gentle simmer over medium-high heat, then lower the heat to medium-low. Cover the pan and let it cook for about 30 minutes.
