Why This Meal Is A Winner

A quick and nutritious way to enjoy a comforting classic without the fuss of soaking and cooking beans from scratch. It’s packed with protein and fiber, making it a satisfying meal for vegetarians and anyone looking for a wholesome option.

Chef Tips

- Use a mix of beans like kidney, navy, and pinto for extra texture and flavor.
- Simmer the sauce gently to let the flavors blend well without burning the bottom.
- Add a splash of apple cider vinegar or a pinch of smoked paprika to enhance the depth of taste.

Step 1

Lightly heat your oven to 350°F (175°C). In a large skillet over medium-high heat, warm up some oil and toss in the chopped onion and jalapeño. Cook them until the onion is soft and translucent, which should take about 5 minutes. Then add the garlic and cook for another minute. Pour in the bourbon and let it simmer gently for about 4 minutes before turning off the heat.

Step 2

In a big bowl, mix together the tomato paste, maple syrup, molasses, vinegar, soy sauce, mustard, and paprika until everything is smooth. Stir in the cooked onion mixture along with the beans, folding everything together carefully.

Step 3

Pour this mixture into a baking dish, cover it, and bake for 35 minutes. After that, uncover the dish and bake for another 15 minutes to let it thicken up a bit. Once it’s done, take it out of the oven and let it rest for about 5 minutes before serving.

How To Present This Dish

Serve warm as a hearty side alongside grilled vegetables or a fresh green salad. It also works well spooned over toasted bread or mixed into a grain bowl for a filling lunch or dinner.

Storing This Dish

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stove or in the microwave, adding a little water if the beans seem too thick. This dish can also be frozen for up to 3 months; thaw overnight before reheating.

Good recipe, but I found it a little too sweet. Next time I’ll cut back on sugar. Otherwise really nice.
